From Germany to Dubai to India: Chef Dennis Koll’s quest for culinary excellence

Chef Dennis Koll has built a distinguished career in fine dining, refining his skills in some of the world’s most prestigious restaurants. From working in Michelin-starred kitchens across Europe to leading top establishments in Dubai, Koll has consistently pursued culinary excellence. His journey began in Germany, where he trained in a highly regarded restaurant affiliated with a culinary university. His goal was clear from the outset—gaining experience in Michelin-starred restaurants, understanding their high standards, and pushing himself to be part of the elite culinary world.

His determination led him to work in a one-Michelin-starred restaurant that specialized in classic French cuisine, where he learned the importance of precision and perfection. He later joined a two-star restaurant that was on the path to earning its third star. Koll’s dedication and relentless work ethic contributed to the restaurant achieving this milestone in 2013, making it one of only 99 establishments worldwide with such a distinction at the time. His experience in these kitchens instilled in him a deep respect for high-quality ingredients and the discipline required to work at the highest level of fine dining.

Dubai: A new challenge

Following this success, Koll received offers from around the world and ultimately moved to Dubai as the head chef of a French fine-dining restaurant. His mission was to revive the restaurant’s reputation, and through a combination of innovative leadership and a strong team, he succeeded in restoring its former glory, earning multiple awards. His time in Dubai exposed him to a fast-evolving food scene where chefs were becoming celebrities, and guests were increasingly curious about the origins and artistry behind their meals.

Bringing fine dining expertise to India

Now, Koll is bringing his expertise to India as the Global Culinary Director of Mercii, a restaurant founded by Arpita Khan Sharma. Rather than reinventing Indian cuisine, he aims to celebrate its rich traditions while blending them with his European fine-dining background. He appreciates the communal nature of Indian dining, where meals are shared rather than individually plated, and plans to incorporate this ethos at Mercii.

Indian Cuisine on the global stage

The global appreciation of Indian cuisine has grown significantly, with Indian fine dining gaining recognition through Michelin stars and acclaimed international chefs. India itself has become a dynamic market for high-end culinary experiences, attracting talent like Koll, who sees an opportunity to merge global techniques with India’s diverse food culture.

Inspired by nature and positive surroundings, Koll thrives in environments that challenge him. His mantra is simple: embrace challenges because they lead to distinction.
